A hugely versatile style wine that will stand up to big flavors such as asparagus, olives, garlic, saffron. The ideal wine to drink with tapenade or a salade Niçoise, a paella or grilled chicken, fish or lamb with herbs. A great wine for barbecues. Enjoyable with pâtés, terrines, other charcuterie. ham and softer cheeses.
We co-fermented four different grape varieties-Petite Sirah, Zinfandel, Merlot and Pinot Noir to create layered flavors. The Petite Sirah and Zinfandel add body and aromatics and a touch of Merlot and Pinot Noir meld the personality together providing complexity and length. The grapes were whole-cluster pressed on the same day they were picked. The juice was fermented in stainless steel tanks at cool temperatures to preserve the delicate fruit aromas. This results in a nice crisp, dry Rosé with complex fruit aromatics.
